Chocolate Æbelskiver with Mango (and two dipping sauces)

Chocolate æbleskiver (Danish pancake balls) with fresh mango. These are gluten-free, refined sugar-free and eggless. They’re naturally sweetened ONLY with fruit (I added some chopped mango into the batter, but pomegranate arils/chocolate chips would work just as well) and served with two vegan dipping sauces - a dark chocolate and a fruity mango. Whipped these up for the hubby’s birthday breakfast and he was very pleased. And I was even more pleased when this photo was selected to be featured in the 7th online edition of CHIIZ Magazine (see below).


Recipes

Chocolate Æbleskiver

(Makes about 16 pancake balls)

Ingredients

3/4 cup (gluten-free) rolled oats 
1/4 cup blanched almond flour 
2 level tbsp cocoa powder
1 tsp baking powder 
1/4 tsp baking soda 
1/4 tsp cinnamon 
A grating of nutmeg
A pinch of salt 
1 large, ripe banana
6 large, soft dates, pitted 
1/2 cup yogurt 
1 tsp oil (more for frying)
1 tsp vanilla 
2 tsp apple cider vinegar 
1-2 tbsp water 
Add-ins:
1 large mango, diced fine (you can sub this with pomegranate arils or chocolate chips if you prefer) 

Method

In a high powered blender pulse the rolled oats until finely ground. Add the rest of the ingredients and blend until smooth.

Transfer to a bowl and stir in the chopped mango bits.

Pour a drop of oil into each of the cavities of the æbleskiver pan and heat over a medium-low flame for a minute.

Ladle a tablespoon of batter into each cavity and cover the pan. Cook until the top starts to set, then carefully turn each pancake ball over and cook on the other side.

Serve immediately.

Chocolate Sauce

Whisk together 1/4 cup dark cocoa (use the finest quality you can find, it makes all the difference), 2 tsp olive/coconut oil, 2 tbsp maple/jaggery syrup (more if you like), 1 tbsp water, 2 tsp pure vanilla (no imitation, please), 1/4 tsp ground cinnamon & a pinch of salt.

Heat for 20 seconds in the microwave and whisk again until smooth.


Mango Sauce

In a high powered blender, purée the flesh of 1 ripe mango, a squeeze of lime and any sweetener of your choice to taste until smooth.
