Instant Milk Pedas (Easy Milk Fudge)

Ending the year on a sweet note with these easy, delicious pedas that are low on effort and big on taste. The traditional preparation of this popular Indian mithai is a tad laborious. This recipe is a short-cut for when you do not have the time or inclination to spend hours in the kitchen. Made with only a handful of ingredients, these pedas have a fudge-like texture. I had made them during Diwali and my family loved them.

Recipe

Instant Milk Pedas

(Makes about 12 pedas)

Ingredients

200 ml sweetened condensed milk
1 cup (100 gms) milk powder (not skim)
1/2 tsp ground green cardamom
2 tbsp whole milk
1 tbsp ghee, divided
12 pistachios or cashews to decorate

Method 

In a nonstick pan, heat 1/2 tbsp of ghee over low heat. Once the ghee melts, add the condensed milk and stir for 2 minutes.

Add the milk powder and stir it into the condensed milk. Cook the mixture for for 3-4 minutes until the milk powder and condensed milk are well combined.

Add the ground cardamom and milk and continue stirring until the mixture starts to leave the sides of the pan.

Add the remaining ghee and cook until the mixture comes together to form a lump. Turn off the heat and immediately transfer the peda mixture to another bowl. Leave it to cool for about 7-10 minutes or until it is cool enough to handle. Do not let the mixture cool completely - the pedas have to be shaped whilst the mixture is still warm. 

Grease your hands lightly with a little ghee and roll tablespoonfuls of the peda mixture into balls. Flatten slightly, make an indentation in the centre of each peda and place a pistachio or cashew half in it. Arrange the pedas on a plate and allow to cool completely before serving. 

Store in an airtight container for upto 4 days.
