Macaroni Salad

This chilled macaroni salad is easy to make, light and delicious. Add any protein of your choice to make it a main. Perfect for days when it’s too hot to cook (or pen lengthy introductions).

Macaroni Salad

(Serves 3-4)

Ingredients

For the Salad - 
2 cups boiled elbow macaroni
2 tbsp chopped celery (use only the stalks)
1/4 cup finely diced red or green bell pepper
1/4 cup boiled green peas 
1/4 cup finely minced onion
3 tbsp grated cheddar cheese

For the Dressing -
1/4 cup mayonnaise (use eggless mayonnaise for a vegetarian version)
1 1/2 tsp dijon mustard
1 1/2 tbsp apple cider vinegar 
1 tbsp honey (or to taste)
1 tsp red chilli flakes 
Salt and pepper, to taste 

Method

Refrigerate all the salad ingredients until chilled. 

Combine all the dressing ingredients in a mixing bowl and whisk well.

Add the prepared dressing to the chilled macaroni and vegetables. Toss until they are evenly coated with the dressing. Serve immediately.
