Piña Colada Popsicles (Dairy-free, Gluten-free)

Who needs a vacation? I know I do! I am channeling sunny holiday vibes with some Pina Colada popsicles. These delicious, grown-up popsicles contain a healthy glug of coconut rum (entirely optional, but highly recommended). They are dairy-free and super refreshing... almost the next best thing to being on the beach. Enjoy!


Recipe

Piña Colada Popsicles

(Makes 6 popsicles)

Ingredients

3/4 cup canned coconut cream (not coconut milk)
1 cup chopped pineapple (fresh or canned)
1 large, ripe banana, sliced
2 tbsp honey (or to taste)
1 tsp lime zest
1 tbsp lime juice
Pinch of salt
3-4 tbsp coconut rum (optional, I used Malibu)

Method

Combine all the ingredients in a high-powdered blender. If using canned pineapple, drain the fruit before adding it.

Blend until completely smooth. Taste and adjust the honey and lime juice as needed. Blend again.

Pour the mixture into popsicle molds and freeze for 40 minutes.

Insert a wooden skewer into each popsicle mold and freeze again for 4-6 hours or until set. 

To remove the popsicles, dip the molds into a mug of hot water. Extract the popsicles and serve immediately.

The popsicles can be kept frozen in an airtight container for 3-4 days.
